    With a rich history spanning 80 years, the Peñas Blancas Mirasol estate Is owned by the Montes family, fourth generation producers, which are mantaining and honoring the heritage of their grandparents.


    The estate is located in Matagalpa, at an altitude of 1200 to 1300 mamsl, nestled on the slopes of the Peñas Blancas Massif, the most important Nicaraguan mountain, located inbetween Jinotega and Matagalpa, which is privileged with an ideal microclimaste to grow specialty coffee.


    They have been known for cultivating exceptional, shade-grown specialty coffee and this particulaer lot iis a blend of carefully selected varieties grown in the estate, and is the first step of a intensive upgrading program which the estate is applying, in order to reach sustainability trough quality excellence, fair trade and direct realtionships with roasters. Their commitiment is to quality consistency from crop to crop, in order to manatin a long lasting mutually beneficial relation with their final buyers..

    Grown Varieties: Parainema, Marsellesa, Ethiosar


    Process: HONEY. The fully ripe coffee cherries are selectively hand picked at their optimal maturation point and left to rest for 24 hours, before pulping and fermanting for 48 hours. Finally the coffee is sundried for 72 hous with all the mucilage and then for another 2 weeks under shade.


    Cup profile: Crazy clear apple rings in the nose!! When wet, notes of apple, rosehip, cranberries, pomegranate, but also some spices, green spices, coriander seeds hints. Juicy medium mouthfeel, also a bit syrupy, and a sweet cherry aftertaste. Medium citric acidity, supportive of the cup.
